Which is the origin of this combination, rooted in the area of Naples?
Some people think that the first Caprese was served after the Second World War, when a very nationalist bricklayer decided to bring together all the colours of the Italian flag and create with them a new kind of sandwich.
It is also possible that the Caprese salad dates back to the twenties. Perhaps it was served during a dinner dedicated to the leader of Futurism – Filippo Tommaso Marinetti – at the Quisisiana Hotel in Capri. Therefore, the aim was to create a menu representing the ideas of innovation, destructuralization and purity promoted by the futurist movement.
There is no doubt that such a basic and simple dish was a sort of breaking point in the culinary history of the 20s.
At the same time this basic dish requires high-quality ingredients which must be selected carefully: Italian mozzarella, fresh basil from Naples, ripe but compact tomatoes and extra virgin olive oil.
