Caprese Salad: the origins of a dish that represents the Italian flag

Everyone knows what the Italian Caprese is! It represents the Italian taste and colours. It’s a basic dish that sums up all the characteristics of our country.

The Caprese Salad is always made of four standard ingredients which you can combine and serve in many ways according to your taste: high-quality Italian mozzarella, juicy and ripe tomatoes, fresh basil, extra virgin olive oil, salt and pepper.

Who was the first one to serve this amazing dish, just by combining these four basic ingredients?

Our Caprese has a patriotic origin!

Which is the origin of this combination, rooted in the area of Naples?

Some people think that the first Caprese was served after the Second World War, when a very nationalist bricklayer decided to bring together all the colours of the Italian flag and create with them a new kind of sandwich.

It is also possible that the Caprese salad dates back to the twenties. Perhaps it was served during a dinner dedicated to the leader of Futurism – Filippo Tommaso Marinetti – at the Quisisiana Hotel in Capri. Therefore, the aim was to create a menu representing the ideas of innovation, destructuralization and purity promoted by the futurist movement.

There is no doubt that such a basic and simple dish was a sort of breaking point in the culinary history of the 20s.

At the same time this basic dish requires high-quality ingredients which must be selected carefully: Italian mozzarella, fresh basil from Naples, ripe but compact tomatoes and extra virgin olive oil.
