Egg pasta is a very common tradition here in Marche region. People prepare tagliatelle for feasts or special events. Campofilone pasta (which is a small town) gained the recognition GPI (Protected Geographical Indication)
ingredients for 4 persons
- campofione tagliatelle
- coarse-grained salt
- parmesan cheese
Do not overcook the tagliatelle. Drain them “al dente”!
